Always a fan of mushrooms but I finally got to try some different fungi today. The wife and I took a trip to Myco Terra Farm in South Deerfield, MA today. We picked up some Blue Oyster, Shiitake, Piopinno and Lions Mane. Made ramen style soup with the Oyster and Shiitake. We pan seared the Lions Mane. I Sauteed the piopinno to make mushroom ravioli. This isnt what I expected based on the forum, but Im for it. Im not familiar with many mushrooms but not against expanding the palette.
So we picked up so Blue Oyster (don’t fear the reaper), Shiitake, Lions Mane (the cauliflower looking chunk), and Piopino.

The blue oyster and shiitake were classic earthy but umani. Balance in the soup I made. The piopino I’ve had before but very nutty and buttery. The big stand out was that Lions Mane. Pan seared it and it was very meaty. My wife said it reminded her of scallops. I can’t wait to go back. I know you’re a new englander as well, so if you can take a trip some time!

Canadian but played in MA often. That said Im sure we can get some decent mushrooms around here, similar climate mostly?

Came here expecting a completely different conversation, and was going to share my story of how I went to Amsterdam, and, long story short, bought a pair of pants on a post-coffee shop shopping spree. Never wore said pants, because they were the tightest, stretchiest plaid ever.

My wife is guiding a hike searching for morels and other mushrooms next month in the nature park where she works. I have tried a few different types of mushrooms. Whitecap, button, portabella, baby bella, dried shitake, oyster mushrooms, and maybe a few other types over the years.

Oyster mushrooms are great for soups and stuffings. Bellas are great for anything with tomato-based sauce. Shitake is great for adding umami, but can be really tough when dried.

I will have to post back in case we find morels on that hike!

I’m sure. All of this was within a giant warehouse that used to be an equestrian center. I’m sure this operation can be done anywhere in a controlled environment. I highly recommend pan searing fresh lions mane.

I've only just warmed up to button mushrooms but the thing I've found is that they have to be good mushrooms and they have to be prepared correctly. I like to cook them almost in a sort of confit of butter, oil, whole bruised garlic cloves, and thyme - I think this can more or less be applied across the board but I haven't put that theory into practice.

Weirdest thing about fungi is that they're neither plants nor animals.

I reeeeeally want to find a restaurant that makes chicken-fried enoki mushrooms. I saw it on Instagram months ago, and it's haunted by dreams ever since.

I pan seared the lions mane with olive oil and butter, seasoned with salt and garlic. The wife said it reminded her of scallops. I plan to make vegan crab cakes with lions mane as soon as I get more.

Fun fact: mushroom have as much potassium as a banana, so if you ever find yourself knee deep in the third set tiebreaker of a tennis match deep in the woods and there are no bananas around, look for some mushrooms.
I used to work in a produce department of a grocery store, and the old people would always tell us they were buying the bananas for potassium, but then would dismiss me whenever I'd mention that potatoes, kiwi, spinach and mushrooms are all much better sources of potassium. I think they were just looking for some "health" excuse to justify buying/eating so many bananas. 😂


This isn't the specific video that I mentioned before, but close. I know this is a recipe video, but my home just isn't conducive to frying like this.

Mushrooms are one of those things that I want to love. People tell me how good they are, i personally think they look delicious, but every time I really give them a shot, my mouth hates it.

I had Shiitake for lunch today :yum:

I love mushrooms. 5 years ago I hated mushrooms and couldn't stomach them. I think it's a maturity as a human thing.
