I still have mine and have never ever heard it sound thin. But I love my XXX. I doubt I'll ever sell it just cause it's like a homebase amp for me. They are especially brutal with a Rat or a SD1 boosting it
I would've said BW with a 59 but the low mids on them might bug you. So I'd say a Nazgul with a Jazz, Sentient or Invader neck. Depends on how bright you like your neck pickups.

Invaders in Jacksons is a beautiful brutal combo. I've got the Invader in 3 guitars and when you know how to set it and if you're able to use a series/parallel switch, it becomes a much more versatile pickup.
Killer Jackson. Also agreed on the Invader. Such a fun pickup. Add a series/parallel switch for extra versatility. So good. I like mine matched with a Full Shred or a matched set. If you're feeling adventurous a 59 bridge or 78 bridge also make a good neck pairing to the Invader.
I regularly play out with my Vader 2x12. I flip it on its side sometimes so it appears vertical. Can't say it sounds thin when farther away from the cab. But we also play with a fair bit of volume. I'd try a different amp or cab combo
I used to use no pedals at all except for a tuner and even that was a lot. Nowadays I use a pedal setup with a clean power amp. Mainly just a boost or two, preamp and a delay but still.
I do love pedals for home use.
It might not be low enough output but a Duncan Custom 7 might be worth looking into. Especially paired with a 59 7 string. Would definitely be versatile.
Otherwise I'd look at those Occult Classics or BKP like previously mentioned.
I have a Dax in a partscaster baritone. Really fun pickup. One of the best Dimarzios imo, especially for switching between rhythm and lead a lot. I can't say it sounds much like EMG 81 but it's just as chug happy and brutal.
Out of your selection, I'd say Nazgul. But I don't find it to sound or feel anything like a EMG 81. I think the Duncan FS is most similar to a 81 but only a EMG feels and sounds like one.
