Pretty much ALL oil finishes won't add protection (unless there are some I am unaware of). The tung oil should work quite well. You can also try Danish oil. Oh, and for a little extra sheen at the end, put on a coat of Howard's Feed N' Wax after the tung oil has had some time to dry.

Yep, all of the above. My guess is that bassist is playing with new, very bright strings; jumbo frets; and pretty low action; all of which should help you get a sound similar to that on the video. The string brand can make a really big difference. Try to find out what strings that bassist uses...

+1, I've always like scarf joints better, although if this is your first guitar and you don't have a lot of experience using a block plane or getting things flat to about .001", you might want to go with the route-away style headstock found on most Fenders. If you do want to do the scarf joint...
HUGE +1! I generally use the golden ratio to proportion guitars to their scale length/neck width. Do a Google search for the term and see what you can find. You'll have to play with it a bit to get your proportions right. There isn't a really straight-forward way of using the golden ratio...
Rotosound has a pretty wide selection of longer length strings too. You can usually get one of their reps on the phone, describe what you need, and they'll let you know which sets (or individual strings) to get.
