Warmoth will build a carved top 7 similar to a prs. They have a 25" scale or baritone 28.6" scale though. I've heard it takes them a long time to paint one too, but its one pretty cheap option if you don't mind piecing one together. Warmoth Direct - 7 String Bodies
There is one in the Carvin museum here: The Carvin Museum - CT3 Player's Gallery It looks pretty good on the carved top model, but I have never seen it on a dc model.
I definitely had to drill out mine to get a 64 gauge string in my sperzel tuner. It's not a big deal if you have a dremmel, but it's a little extra aggravation.
Carvins are pretty bright sounding. I was always a fan of brighter tones like strats and teles, so I love the sound of them. But, if you like dark guitar tone, lots of people probably find them a little bright/thin sounding.
I guess I should mention that the white/white paintjob seemed to add signifigantly to the build time. It took 3 months total to build. The guy I called at Carvin said that it was a horribly difficult paint job to do right for some reason. I almost had them change the paint to something...

I had to screw out the thumb wheel thingy from the tuner for the low B string, drop the pin out, and widen the tuner hole. I think Carvin had it set up for a .056 or .058 gauge low B string. I have 9.5-13-17-26-36-49-64 on it now in A standard. I had to re-intonate a bit, but it was setup...
I just got in my matte white/white Carvin 727. I had them put a satin clearcoat over the white. Blank ebony board, and stainless frets. Excuse the quality of the pictures.
