Not sure if this counts, but Psalm Zero play acoustic sets from time to time. (This clip is with the infamous Andrew Hock, who has since departed the band)

Though to be honest, I just wanted an excuse to plug Charlie Looker's stuff, since there's very little he's done that I don't enjoy immensely.

"Days of the New" don't quite fit the prog bill, being more acoustic rock or metal, but you might like their stuff. I remember hearing "Rough Day" back in 2000 and being seriously impressed:

Fuck this is good, how did I not hear of this before. I knew Jorn Lande kicks ass, but not this band. At first I was like ok, tight guitar, but I got totally sidetracked by the bass playing.
