Right now Im playing with a full baritone set on my seven string but bending with a baritone set is not that easy, I could train my fingers but for now Id rather have it easy to bend, but Im very fond of the thickness of the 7th-4th string so Im wondering if its possible to use thicker (baritone) strings on the strings 7-4 and thinner strings on the 1-3 strings?

You can use whatever you want. What you're describing is a hybrid set. I use them as well. On my sevens I use a custom 9-12-16-26-36-46-60 set. On sixers for Eb I also use the highs from 10's and the lows from 11's.
