SRV had some great tone, also if you consider vai to be non-metal his tone is pretty good. Vai's tone live is 10/10 in my book

Adam Jones from Tool is one of the best and most innovative rock guitar players ever, in my opinion, and the tones he gets from all his amps, guitars and effects boxes are nuts.

I've always admired John Frusciante's tone. Especially how good he is with distortion. He seems to use just the right amount and only when it's appropriate.

And Derek Truck's tone is just beautiful, especially for sliding.

Brand New has some amazing tones that cover a huge variety of sonic territory. Go listen to Welcome to Bangkok and tell me that's not the craziest shit you've heard today. Their album Daisy is just perfect tonally.
The Angelic Process also has the heaviest tone I've heard, though they could be considered metal depending on how broadly you view the term.
