I've also got a One-S, and it hasn't been touched in years. It's pretty far out of date at this point.

I'd be very worried about the fact that a lot of titles ship pretty broken on disk and rely on day-1 patches to get your "real" release version 1.0. I won't name any names, but I've been on projects as far back as almost a decade ago that shipped with what amounted to an alpha build on the disk, and if you wanted a stable experience the day-1 was unavoidable.

If we're talking just bug fixes, an update shouldn't be that big, but there are also titles out there that don't ship with most of the content on the disc at all and expect the client machine to download stuff ad-hoc as needed. In todays gaming landscape of the future, the disc is just a license sometimes. The game may or may not actually be on the disc.
I don't remember if it was on this forum or some other one, but I used to think that most discs were just basically download keys until someone showed me this site:

It's pretty good about saying what's wrong with disc versions. However, they have very sparse data on Xbox games compared to PS4, and it looks like Xbox have a higher incidence of "patch required even with disc" games. Certainly there are a lot of games that are buggy in the 1.0, but it's not like they're usually unplayable in that form. If you get discs of things like GOTY editions they include all those fixes, too.

Patches are pretty ridiculous. It's common on the PS4/5 for a "minor" update to be 6 gigs or bigger. I live in a small town with a monopoly so I pay out the nose for internet, but I don't have a data cap and have good speed so I can usually get those patches in just a few minutes. But boy, is it hostile to my friends that actually live in the country and are stuck with DSL. One of my coworkers used to bring in his Xbox and download patches during the workday off the company internet. :p

That's neat, but maybe paints an incomplete picture. The examples I was thinking of are reported by that site as if they're perfectly good off the disc - and they "technically" are playable all the way through, but just. You're still getting a pre 1.0 build that way. It's been my experience that if there's a day-1 patch, it's because there's something relatively critical that didn't get fixed before the disc was printed. At least that's how it was back when I would have been one of the people chasing that last critical thing. But then, a consumer's definition of critical might not match what a dev thinks is critical.

Fucking hell, this boss for the Falling Snow mission shouldn't be stonewalling me as much as she is; but somehow she has like, perfect near and mid-range attacks and ranged combat just isn't an option. Get close? Constantly have to side/backstep her slash and AOE attack, stay too far away? Projectiles of ice or her spinning staff that kills my entire ki bar for her to close the gap during.

I just had easily the worst run on her so far, hit her with Sloth and got close for Living Weapon but OOPS! she immediately grappled me and fucking killed 3/4 of it between her attack and my slow ass getting back up. Then as I was hitting her with Sloth again, spinning staff for ONE hit and I was dead. Fucking pathetic.

Got the second bell. Quelaag has followed the pattern of DS1 bosses being pretty easy. Took two attempts because of a stupid mistake in the first one. Found a hidden spider lady, but accidentally killed what I think was a meaningful NPC on the way there. On the way to Sens Fortress now.

Remember that spider lady, you need to join her covenant and give her 30 humanity if you want to make tomb of the giants remotely easy. I don’t know if you’re locked out from that if you kill her egghead buddy or not, never done it.

Well, nevermind, I switched from my Greatspear and Raikiri to dual swords and they're my new best friend; I'm doing six hits in the same span as what used to be 4, and the total damage is like 150pts higher. Thank FUCK I've been putting points into skill as well as everything else.

I also got my Guardian Spirit up a bit, my spirit is now only 10 but it's still like an extra 200 into GS bond, whatever that means. Byproduct of it is having Onmyo damage increase too, and I've got Sloth/Fireball/Lightning at the ready, with water/earth able to sub in too.

I still had the option to join, but I didn't do it yet. I more or less ran away and backtracked to outside the fortress. Oh, and fed the weird snake head thing all my duplicate weapons 'cause it's been irritating to carry so much garbage around.

If you buy the storage box item from a vendor you can put all the ones you don’t use into storage and clean up your inventory, too. I usually sell all the duplicates and then put everything I won’t use anytime soon into storage. It’s worth keeping out some gimmick weapons like blessed weapon and fire weapon, but otherwise you pretty much only need your actual upgraded weapons and ranged weapons for utility. I also like to deposit all the rings I won’t use. Makes it a lot easier to swap gear with their crappy menu system. Since with only two ring slots you need to be changing gear a LOT.

Today I got on my trusty Torrent and put down some bosses. First I beat Romina Saint of the Bud, twice. My game somehow bugged and didn't save my progress, so I had to beat Romina again.

Then I ran into Ralva the great red bear and last I got rid of Rellana twin moon knight. Rellana surprised me with the gigantic AOE balls attack and killed me once with it, but on the second try I put her to rest.

I've mostly been using the bottomless box thing to hold onto stuff that I don't want to use accidentally. Like I think the firekeeper souls need to be held onto until I rescue the person or something like that.

That's correct. There's confusion with that, though. One of the firekeeper souls is used to resurrect her (you wouldn't have it yet, because you have to use that orb in Anor Londo, but it sounded like you already have it so you should be good). But, it has the same name and icon as the normal ones! Just make absolutely sure you don't use any to upgrade after you've cleared Anor Londo until you've revived her at firelink. I've heard many, many people complain that they had no idea you needed one of them to revive her and they just used it for an upgrade, so there was never a bonfire at firelink again.

This makes it sound like it's safe to use the one I have.... I think?

Which seems awfully inconvenient for such a central location. Brutal.
Yes. The one that contains her soul is the one you get from the event in Anor Londo. It's safe to use the other ones. It's just as soon as you pick up the special one, it's not safe to use any cause there's no way to avoid accidentally consuming the important one when you choose to strengthen the estus flask.

There's a couple other NPCs that can strengthen the Estus Flask, and maybe you can even do it where the Firelink firekeeper was when she's dead?? Definitely the firekeeper at the beginning of Anor Londo, and maybe the magic blacksmith guy that's over by the edge of the cliff at the start of New Londo? I forget where else.
