Godflesh - Streetcleaner and Selfless
Iron Monkey - S/T and Our Problem
King Crimson - Red and The Construction of Light (I wish I could play like that)

Other notables:
Fields of the Nephilim and Sisters of Mercy - for cleans with massive chorus and delay
Slayer - for realising that solos can just be sheet noise nuts
future sound of london - for just creating a sound
Actual, proper horrible doom (e.g. Khanate) - for just being slow and wrong

Metallica - And Justice for All
Megadeth - Countdown to Extinction
Alice in Chains - Facelift
Carcass - Heartwork
Dissection - Storm of the Light's Bane
Testament - Low

There are many others, but I can pretty easily remember the first time I heard each of those albums and what I was doing musically at the time.

Metallica - And Justice for All
Megadeth - Rust In Peace
Testament - Practice What You Preach
Joe Satriani - Surfing with the Alien, Flying in a Blue Dream
Steve Vai - Passion and Warfare
Cacophony - Go Off!
Van Halen - 5150, FUCK, Balance (didn't start liking them until around '90)
Alice in Chains - Facelift and Dirt
Jimi Hendrix - Live at Woodstock

These albums changed everything for me! I remember hearing each one for the first time and thinking... wow, I never knew you could do that with a guitar! I'm trying to think of what has made me feel that way in the last couple years... maybe the first time I saw the CAFO video? Also, the Sequoia Throne video for PTH.
