Anything Clint Mansell does. Moon and The Fountain are both in my top 10 favorite films and Clint does both soundtracks.

I already mentioned the Metal Gear series as a whole, but I really should have posted these.

From Metal Gear 2 for the MSX, which never saw a US release, really cool game with some great tunes.
The only way to describe the gameplay is if one went and demade Metal Gear Solid (PSX) for SNES

The History Of O soundtrack - Breathy singing and amazing bass


The phenomenal soundtrack to Akira - Epic eastern music


And The Thin Red Line (especially the Ives piece)- Just epic as hell!


And don't tell anyone but.....

I liked the movie too, I just think the positives of the soundtrack get balanced out entirely by that part :D

EDIT: Django Unchained has the best "compilation" style soundtrack I've ever heard.

My 2 favorites:

Prince of Persia Sands of Time Game. It has lots of beautiful melodic metal tunes. Unfortunately most of the online sources do not contain these (once I extracted all these from the game but lost my hard drive :()

2nd is Mirror's Edge - not rock/metal, but very atmospheric.

I really dig anime OSTs. Both the original background tracks for the series and the openings songs which are most the time by some Japanese band/artist. Some of my all-time favorites are NHK! Ni Youkoso and Angel Beats! soundtracks. Some really nice rock songs and piano compositions there.

I really don't like the Inception and Batman music much outside the movies, the soundtracks sound more like EPIC THEATER-SOUND-SYSTEM-SHAKING BOOMFEST than interesting compositions to me. They're certainly not BAD but I don't get all the fascination with him. Give me the soundtrack to Conan the Barbarian (the Arnie one) any day!
