Gordian Knot - Rivers Dancing (Ron Jarzombek)
Steven Wilson - Drive Home (Guthrie Govan)
Manfred Mann's Earth Band - California (Dave Flett)
Dream Theater - Octavarium, or The Best of Times, or the end of The Count of Tuscany (John Petrucci)
Extreme - Get the Funk Out (Nuno Bettencourt)

Ask me tomorrow and I'll probably have changed my mind. Very difficult to narrow it down to five.

I really like Nuno's solo in "Hole Hearted" (acoustic guitar, though). As a kid, I used to love this song mainly because it - and I wasn't a metalhead nor did I know how to play any instruments.

I don't think I could pick just a few, but I'm gonna throw at least one more song into the pool - one which I was listening to just yesterday:

The Gathering - Broken Glass

EDIT: oh, and also

Sentenced - Excuse Me While I Kill Myself

Soma - Smashing Pumpkins (Billy Corgan)

F*ckin great choice man! That is one of the best non-wankoff type solos, really killer.

I really dig the "No More Tears" solo. Been trying to play the last double picking part for the last 10 years. I'm about 4-5 bpm too slow still!
