It's pretty simple if you aren't wanting to change the switching setup or pots, etc. You've got the idea- remove the old pickups wiring (leave the pots/switch stuff) and solder in the new pickups. When you remove the old pickups, take note of where and how they are connected to the selector.

I couldn't agree more. One of the first "real" amps that I got was a 5150. I sold it and went through 20+ other amps. I ended up multiple times going back to the 5150 (or modded 5150 II). If I was gigging or in a band I would have a 5150. Until then, I'll have to stick with my modelers.
Yep, that's where I'd start! I'd look at your preamp tubes as well, but if your tone is just getting flubby (not noisey, or volume decreaseing) it's not likely that it's from them.
