Can I use a metal brick instead of my bridge as my electrical ground?

If it isn't part of the signal circuit and doesn't run over the pickups, I don't think it'll make much difference.

I'm guessing that the vast majority of guitars are not properly shielded and not properly grounded, which is why the idea that human flesh is the only proper way to shield and ground a guitar seems to persist. Aluminium foil is pennies per m³, and a wire from the bridge to ground should be like a fraction of a penny, but I guess the labour to install such things is not worth the reduced buzz to anyone in the market for a $1000 (or less) guitar.
