Wow!
Here's me wondering what 31 EDO will feel like and how playable it will be, having only that one Stephen James Taylor video to go by. This is something else entirely haha.
I presume at this point is almost like a stepped fretless. Like playing fretless with autotune but a bumpy feel.

How would someone even go about learning how to play an instrument like that? That's crazy!

It is somewhat crazy, even microtonal guitarists consider that crazy, good luck to the owner, it will need very good technique to cleanly play.
I have a 24 fret per octave guitar and the fret spacing is already slightly problematic, i rarely play above the octave fret.
It is possible to play frets that are closer than the width of your finger, it just needs more pressure and making sure the side of your finger is at the correct place.
