Been burning the candle at both ends for the last 12 days, working my normal job full time and commuting 4 or 5 days a week, then coming home to fix up our rent and get it ready to sell ASAP. I've basically been running on 6 hours max of sleep and lots of caffeine while my partner is swamped with school and helping to stage said house over the weekend. The reason I'm happy is that I finally decided to take a few days off next week and I'm taking a break this afternoon, as I can see the light at the end of the tunnel. We're aiming to have the repairs/touchups done this weekend and ready to list sometime next week, but realistically there isn't a hard deadline, just the sooner we can sell it the better. And luckily the tenant that was there for the last 2.5 years left it in good condition, considering he's a single middle-aged guy (not the cleanest demographic).

I'm just really looking forward to getting back to decent nights of sleep, having less stress, and having cash in our pockets.

I'm currently on day 4 of my first vacation since Christmas/NYE/2024 essentially, and I was supposed to have taken it ...almost a month ago? I planned it after a bunch of deadlines, then they all got moved and new ones kept popping up - all somehow also shockingly assigned to me (yay!) - so I finally told them I'm taking it this week as I need to, or else I was gonna lose it and it's their fault.

Can't wait to use my other two weeks in the other 5 remaining months, I'm thinking late Sept and early December

I just made a Texas inspired chili dog and it was fucking awesome.
I used my personal chile Colorado (aka bowl of red) recipe in lieu of a typical Coney Island recipe and good snappy all beef hot dogs.
Man, there ain't much that beats homemade chili on really good beef franks. I haven't done that in years. You may have inspired me for the weekend.

Care to share the recipe?
2 lbs of ground beef (80/20 is the leanest I would go)
1 can of Chipotles in adobo sauce
1-2 Fresno/Hatch Chilis or whatever chilis you want
2 tbsp Ancho Chili powder
Cayenne powder (to taste)
small pinch of cinnamon
1 tbsp Cumin
2 tbsp unsweetened cacao powder
A splash of good beer (to deglaze the fond from browning the meat)
4 oz of strong coffee (to bloom the cocoa)
1 can of fire roasted tomatoes
Half an onion (diced)
4-6 cloves of garlic (minced or pressed)
Splash of vegetable oil (for sauteing the garlic/onions)

- Acquire a large pot, add garlic/onions/oil and cook on low medium heat til onions soften and look translucent. Remove from heat afterwards.
- Chuck the chipotles with the adobo sauce into a blender and add all the seasonings. You can always add to it later too.
- Add the coffee to the cocoa to bloom it. Stir together and add to the blender.
-If you use dried chilis then remove the seeds before chucking them into the blender. Also helps to rehydrate them in hot water for a while to make them pliable.
- blend everything well and then set aside.
-remove onions and garlic from pot and add them to the sauce (you can blend them in or leave them as is for some textural variety)
-Brown your beef in the large pot. Don't worry about bits sticking or having to scrape yet.
- Once you have a good fond going, deglaze with some decent beer. Drink the rest.
-Add the sauce to the pot and let simmer on low for at least 2-3 hours. Stir occasionally.
-Add additional seasonings as needed.

You want a slightly sludgy consistency so it doesn't slide off the hot dog easily.

For the hotdogs you want a snappy, natural casing all beef hotdog.

I'm happy right now as I believe I'm finally ready to take serious efforts to work on my creative side of things and try building a second career out of it. Goal is that if its fruitful, I may transition into this full time in a few years time?

baby steps for now, but i'm feeling inspired

What kind of cinnamon? There are two different kinds if memory serves.

My old recording laptop took a shit but I've got a new one on the way. After doing a bunch of research I settled on a Lenovo LOQ 15, which is a "gaming" laptop but has everything I was looking for at a better price tag than I found anywhere else.

Also, we talked to a synth player yesterday about joining the band and it seems like she's going to be a great fit.

Does your office/company do Juneteenth off? I forgot my own does, so we have this upcoming Wednesday off, might be a freebie making it 4 days off.
