Man, there ain't much that beats homemade chili on really good beef franks. I haven't done that in years. You may have inspired me for the weekend.I just made a Texas inspired chili dog and it was fucking awesome.
I used my personal chile Colorado (aka bowl of red) recipe in lieu of a typical Coney Island recipe and good snappy all beef hot dogs.

1 can of Chipotles in adobo sauce
1-2 Fresno/Hatch Chilis or whatever chilis you want
2 tbsp Ancho Chili powder
Cayenne powder (to taste)
small pinch of cinnamon
1 tbsp Cumin
2 tbsp unsweetened cacao powder
A splash of good beer (to deglaze the fond from browning the meat)
4 oz of strong coffee (to bloom the cocoa)
1 can of fire roasted tomatoes
Half an onion (diced)
4-6 cloves of garlic (minced or pressed)
Splash of vegetable oil (for sauteing the garlic/onions)
- Acquire a large pot, add garlic/onions/oil and cook on low medium heat til onions soften and look translucent. Remove from heat afterwards.
- Chuck the chipotles with the adobo sauce into a blender and add all the seasonings. You can always add to it later too.
- Add the coffee to the cocoa to bloom it. Stir together and add to the blender.
-If you use dried chilis then remove the seeds before chucking them into the blender. Also helps to rehydrate them in hot water for a while to make them pliable.
- blend everything well and then set aside.
-remove onions and garlic from pot and add them to the sauce (you can blend them in or leave them as is for some textural variety)
-Brown your beef in the large pot. Don't worry about bits sticking or having to scrape yet.
- Once you have a good fond going, deglaze with some decent beer. Drink the rest.
-Add the sauce to the pot and let simmer on low for at least 2-3 hours. Stir occasionally.
-Add additional seasonings as needed.
You want a slightly sludgy consistency so it doesn't slide off the hot dog easily.
For the hotdogs you want a snappy, natural casing all beef hotdog.
